Ingredients:
4 tbspExtra virgin olive oil
4 largeOnions, sliced
2 tspThyme, fresh, chopped
8 largePlum tomatoes
1 1/2 lbsZucchini, small
Procedures:
1Preheat oven to 375°F.
2In skillet, heat 1 t oil over medium heat.
3Add onions; saute 10 minutes, or until tender.
4Add 1 t thyme and ?t each salt and pepper.
5Cut each tomato lengthwise into 4 slices.
6Slice zucchini crosswise into ?inch diagonal slices.
7Arrange tomate, zucchini and onion slices in rows across width of 2 ?qt shallo baking dish.
8In small bowl, combine remaining 3 t oil, ?t salt and ?t pepper; mix.
9Drizzle over vegetables.
10Cover tightly with foil.
11Bake 15 minutes; uncover.
12Bake 30 minutes or until vegetables are tender; let stand 10 miutes before serving.
