Ingredients:
1 xCRUST
1/4 cupSugar
8 tbspButter
9 ozJell-o, (3 pkgs.), *
1 cupPineapple juice, hot
1 cupPinapple, crushed, drained
1 2/3 cupVanilla wafer crumbs
1 cupPecans, finely chopped
1 xFILLING
3 ozLemon jell-o, (1 pkg.)
1 cupHeavy cream
Procedures:
1* select packages of jell-o in complimentary colors and flavors.
2++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++ ++++ crust: preheat oven to 375 °F.
3Combine vanilla wafer crumbs, sugar, and pecans.
4Cut in butter.
5Press into 9 x 13-inch pan.
6Bake 8 to 10 minutes.
7Filling: in separate greased 8-inch square pans, make each of the 3 flavors of jell-o according to the directions on the package.
8When set, cut into ?inch cubes.
9Dissolve lemon jell-o in hot pineapple juice, then add ?c cold water.
10Place in refrigerator until it starts to set.
11Whip cream.
12Fold crushed pineapple into whipped cream, then add semi-set lemon jell-o.
13Fold in the jell-o cubes and pour into crust.
14Chill about 1 hour before serving.
