Ingredients:
1 cupCarrots, Pared, Cut Up
1 largeApple, Cored, Cut Into
Wedges, DO NOT Peel
1 largeOrange, Cut Into Wedges DO
NOT Peel
1 cupDates, Pitted, Cut Up
1 cupRaisins
4 1/2 cupUnbleached Flour, Sifted
1 tspBaking Soda
1 tspGround Cinnamon
1/2 tspSalt
1/2 tspGround Nutmeg
1/4 tspGround Allspice
1/4 tspGround Cloves
1 cupButter Or Regular Margarine
2 cupSugar
3 largeEggs
1 cupWalnuts, Chopped
Procedures:
1Grind the carrots, apple, orange, dates, and raisins together in a food grinder, using the medium blade.
2Set aside.
3Sift the flour, baking soda, spices,and salt together, blending well, then set aside.
4Cream the butter and sugar together, in a large mixing bowl, until light and fluffy, using an electric mixer set on medium speed.
5Add the eggs, one at a time, beating well after each addition.
6Gradually stir in the dry ingredients into the creamed mixture, blending well.
7Stir in the ground fruit mixture and the walnuts.
8Drop the mixture, by teaspoonfuls, about 2-inches apart on greased baking sheets.
9Bake in a preheated 350 °F.
10Oven for 10 to 12 minutes or until golden brown.
11Remove the cookies from the baking sheets and cool on wire racks.
