Ingredients:
1 smallApple, peeled and diced
12 medSize bananas, sliced
1 smallOrange, sectioned
1/2 cupSeedless grapes
1 tbspFrozen orange juice
-concentrate
1/4 cupLow-fat yogurt
2 tbspPart-skin ricotta cheese:
1/8 tspGround ginger
1/8 tspGround cinnamon
1/2 tspPure vanilla extract
1/2 tspPure vanilla extract
4 Walnut halves
Procedures:
1Place all fruit in a bowl and mix in frozen orange juice concentrate.
2In a blender, combine yogurt, ricotta, ginger, cinnamon and vanilla.
3Portion the friut into dessert bowls, top each with yogurt-ricotta sauce and garnish with a walnut half.
4Other fruits may be substituted, such as melon, kiwifruit, strawberries, blueberries, pears, or pineapple.
5The fruit medley may also be served without topping.
