Challah almost like aunt leah's

Ingredients:
5 tspYeast, dry
2 cupPotato water
3/4 cupSugar
2 tspSalt
3 Egg
7 cupFlour, (adjust as needed)
1/2 cupOil
Procedures:
1Dissolve yeast in potato water.
2Add sugar, and let stand five minutes.
3Add salt and beaten eggs.
4Stir in four cups of the flour.
5Add oil, stirring while adding.
6Stir in enough remaining flour to make dough that forms a ball and is not sticky.
7Put dough on a floured board.
8Cover with a towel and let rest 10 minutes.
9Knead 10 minutes.
10Put in a greased bowl, and let rise until it doubles (about one hour).
11Punch down.
12Braid to form two loaves and place on cookie sheets.
13Let rise again, approximately 50 minutes.
14Use a pastry brush to gently coat with a glaze made of a beaten egg and a few drops of water.
15Sprinkle the top with sesame seeds.
16Bake at 350 degrees until well done (approximately 45 to 50 minutes).
