Ingredients:

| cup | Self-rising flour | | 1/2
| cup | Rice flour | | 1
| tbsp | Cornstarch | | 1

| tsp | Salt | | 4
| tbsp | Fine brown sugar | | | Oil, for deep frying |

Procedures:
| 1 | Slice each banana lengthwise. | | 2 | Sift flours and add to water. | | 3 | Stir until consistency of cream. | | 4 | Add salt. | | 5 | Heat oil and, when smoking, dip each piece of banana in batter. | | 6 | Shake off excess and lower into hot oil. | | 7 | Fry until golden brown and roll in brown sugar. | | 8 | Serve with ice cream. | | 9 | As quoted from the book, "this is an exotic way to treat bananas and it"s practically a national snack among migrant populations in southeast asia who serve it with scoops of coconut or mango ice cream." |
