Ingredients:

| cup | Yogurt, plain | | 5
| cup | Gooseberries | | 2
| tsp | Orange juice concentrate | | 3/4
| cup | Sugar |

Procedures:
| 1 | Pour yogurt into cheesecloth lined sive set over glass bowl, refrigerate and let drain for 1 hour. | | 2 | Meanwhile, reserve a few berries for garnish. | | 3 | In saucepan, combine remaining berries with orange juice concentrate, cover and cook over low heat, stirring occaisionally for 25-30 minutes or till very tender. | | 4 | Using a potato masher, mash berries, pass through a food mill or puree in a food processor and press through sive to remove skins and seeds. | | 5 | Return to saucepan. | | 6 | Stir in sugar, simmer for 3-4 minutes, or till sugar is dissolved. | | 7 | Taste and add more sugar if desired. | | 8 | Refrigerate till chilled. | | 9 | Stir drained yogurt into puree, leaving attractive swirls. | | 10 | Top and tail reserved gooseberries, arrange on top along with mint leaves (if desired) for garnish. | | 11 | Serves:4 |
