Gooseberry fool - light

Ingredients:
1 1/2 cupYogurt, plain
5 cupGooseberries
2 tspOrange juice concentrate
3/4 cupSugar
Procedures:
1Pour yogurt into cheesecloth lined sive set over glass bowl, refrigerate and let drain for 1 hour.
2Meanwhile, reserve a few berries for garnish.
3In saucepan, combine remaining berries with orange juice concentrate, cover and cook over low heat, stirring occaisionally for 25-30 minutes or till very tender.
4Using a potato masher, mash berries, pass through a food mill or puree in a food processor and press through sive to remove skins and seeds.
5Return to saucepan.
6Stir in sugar, simmer for 3-4 minutes, or till sugar is dissolved.
7Taste and add more sugar if desired.
8Refrigerate till chilled.
9Stir drained yogurt into puree, leaving attractive swirls.
10Top and tail reserved gooseberries, arrange on top along with mint leaves (if desired) for garnish.
