Ingredients:
1/2 cupApple juice
1 cupCarrots -- shredded
1 cupCelery -- chopped
1/2 cupOnion -- chopped
1/4 tspNutmeg
8 cupCornbread cubes -- dry
2 cupApples, peeled -- finely
Chopped
1/3 cupWalnuts -- chopped
1/4 cupWheat germ, toasted
1 cupChicken broth, defatted
Procedures:
1Preheat oven to 350°F.
2Coat a large skillet with nonstick cooking stray.
3Add juice, carrots, celery, and onion and cook until tender.
4Stir in nutmeg.
5Lightly coat a three- to four-quart casserole dish with nonstick cooking spray.
6Place cornbread cubes, apple, walnuts and wheat germ in casserole dish and toss lightly.
7Add onion mixture.
8Drizzle with enough broth to moisten and toss lightly again.
9Bake for 30-40 min.
