Ingredients:

| cup | Baking apples, peeled and | | | - sliced (about 6 lbs.) | | 3
| tbsp | Lemon juice | | 4 1/2
| cup | Sugar | | 1
| cup | Cornstarch | | 2
| tsp | Ground cinnamon | | 1/4
| tsp | Ground nutmeg | | 1
| tsp | Salt | | 10
| cup | Water |

Procedures:
| 1 | In a large bowl, toss apples with lemon juice; set aside. | | 2 | in a dutch oven over medium heat, combine sugar, cornstarch, cinnamon, nutmeg and salt. | | 3 | Add water; bring to a boil. | | 4 | Boil for 2 minutes, stirring constantly. | | 5 | Add apples; return to a boil. | | 6 | Reduce heat; cover and simmer until the apples are tender, about 6 to 8 minutes. | | 7 | Cool for 30 minutes. | | 8 | Ladle into freezer containers, leaving ?inch headspace. | | 9 | Cool at room temperature no longer than 1-?hours. | | 10 | Seal and freeze; store up to 12 months. | | 11 | Makes enough for about five 9-inch pies. |
