Homemade apple pie filling (taste of home)

Ingredients:
18 cupBaking apples, peeled and
- sliced (about 6 lbs.)
3 tbspLemon juice
4 1/2 cupSugar
1 cupCornstarch
2 tspGround cinnamon
1/4 tspGround nutmeg
1 tspSalt
10 cupWater
Procedures:
1In a large bowl, toss apples with lemon juice; set aside.
2in a dutch oven over medium heat, combine sugar, cornstarch, cinnamon, nutmeg and salt.
3Add water; bring to a boil.
4Boil for 2 minutes, stirring constantly.
5Add apples; return to a boil.
6Reduce heat; cover and simmer until the apples are tender, about 6 to 8 minutes.
7Cool for 30 minutes.
8Ladle into freezer containers, leaving ?inch headspace.
9Cool at room temperature no longer than 1-?hours.
10Seal and freeze; store up to 12 months.
11Makes enough for about five 9-inch pies.
