Ingredients:

| large | Tart, Green Apples, peeled | | | -cored and coarsely chopped | | 1/4
| cup | Sugar | | 1/4
| cup | Water | | 1/4
| cup | Golden Raisins | | 1/2
| tsp | Ground Cinnamon | | 7
| oz | Box Shortbread Cookies | | 1
| pint | Vanilla Ice Cream | | 1/4
| cup | Walnuts, chopped |

Procedures:
| 1 | In a medium-sized saucepan, combine apples, sugar, water, raisins and cinnamon; bring to a boil, reduce heat to medium and cook apple mixture, covered, for 15 minutes. | | 2 | Stir occasionally and cook until all moisture is absorbed. | | 3 | Place cookies in a bag and crush with rolling pin into crumbs. | | 4 | Divide half the crumbs between serving glasses. | | 5 | Divide apple mixture between serving glasses and top with remaining crumbs. | | 6 | Scoop ice cream onto each and sprinkle with nuts. | | 7 | Serve at once. |
