Ingredients:
| 1/2
| cup | Butter | | 1/2
| cup | Sugar, or | | 1/3
| cup | Honey | | 4
| | Eggs | | 1
| | Egg Yolk | | 1/2
| cup | Fresh Lemon Juice | | 3
| tbsp | Lemon Peel, grated |

Procedures:
| 1 | Melt butter in a double boiler over simmering water. | | 2 | Add sugar; stir until dissolved. | | 3 | Using a wire whisk, beat in eggs, egg yolk, lemon juice and peel. | | 4 | Cook over low heat, stirring, until mixture thickens. | | 5 | Do not overcook, as curd may curdle and separate. | | 6 | Remove from hot water. | | 7 | Cool 5 minutes. | | 8 | Pour into containers and seal. | | 9 | Refrigerate for up to 2 weeks. | | 10 | Serve with muffins, scones, english muffins, or toast. |
