Apple & barley pudding

Ingredients:
4 tbspPearl barley
1 1/2 lbsEating apples*
2 ozSugar
3/4 tbspDouble cream
1 literWater
Procedures:
1* peeled, cored and sliced.

3Put the barley in the water and bring to the boil.
4Add the sliced apples and continue cooking gently until the barley and apples are soft.
5Press through a sieve, or put through the blender, and put back in the saucepan.
6Add the sugar and lemon juice and bring to the boil again.
7Remove from the heat, allow to cool, and then chill.
8Serve cool with the cream stirred in.
