Ingredients:
1 cupZucchini, chopped
1 cupEggplant, chopped pared
1/2 cupTomato
1/2 cupGreen pepper, chopped
1/4 cupOnion, chopped
1 cupGarlic, crushed
1/4 cupMargarine , or butter
3/4 tspSalt
1/2 tspThyme, leaves
1/8 tspPepper
1 cupMonterey jack cheese, shred
1 1/4 cupMilk
1/4 cupSour cream
3/4 cupBisquick
3 Egg
Procedures:
1Heat oven to 400 °F.
2Lightly grease pie plate.
3Cook zucchini, eggplant, tomato, green pepper, onion and garlic in margarine until veg- etables are crisp-tender, 5-10 minutes.
4Stir in seasonings.
5Spread in pie plate; >>sprinkle with cheese.
6Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater.
7Pour into pie plate.
8Bak until knife inserted comes out clean, 30-35 minutes.
9Let stand 5 minutes.
10Makes 4-6 servings.
