Ingredients:
1 ?LB LOAF
1 cupWater
3 cupBread flour
3 tspGluten
1 1/2 tspSalt
3 tbspSugar
3/4 tspDried lemon peel
3/4 tspGround allspice
1 1/2 tbspButter
2 tbspDry milk
2 tspRed Star Active Dry Yeast
3/4 cupRaisins
Procedures:
1Put all ingredients in bread pan in order of manufacturer directions.
2This makes a dense medium size loaf (6-7 inches tall).
3For a fluffier taller loaf, increase yeast to 2 ?teaspoons.
4Have ingredients at room temperature.
5If necessary, warm water and butter in microwave for 50-60 seconds on high.
6For my hitachi 101 add ?cup raisins 4 minutes into first cycle.
7Add remaining raisins just after resting period and as second kneading begins.
