Ingredients:
3 1/2 cupMilk 2 Eggs -- separated
2 1/2 cupCornmeal mix
Procedures:
1Heat oven to 32Grease 1 ?qt. casserole.
2Scald 2 ?cups of the milk in small saucepan.
3Gradually add cornmeal mix, stirring constantly.
4Continue cooking and stirring until mixture looks like thick mush.
5Stire in egg yolks, 1 at a time.
6Remove from heat.
7Stir in remaining 1 cup milk.
8In bowl, beat whites until stiff.
9Fold into cooked mixture.
10Put into casserole.
11Bake 1 hour, until golden brown.
12Makes 1 pan of spoonbread
