Ingredients:
2 tspWhole cumin seeds
4 eachWhole cloves
3/4 tspBlack cardamom seeds
1/2 tspWhole black peppercorns
1/4 tspWhole allspice
1 tspFenugreek seeds
1/2 tspWhole coriander seeds
10 smallDried red chilies
1/2 tspGrated ginger
1/4 tspTurmeric
1 tspSalt
2 1/2 tbspSweet Hungarian paprika
1/8 tspCinnamon
1/8 tspGround cloves
Procedures:
1In a small frying pan, on a low heat, toast cumin, cloves, cardamom, peppercorns, allspice, fenugreek & corainder for about 2 minutes, stirring constantly.
2Remove from heat & cool for 5 minutes.
3Discard stems from chilies.
4In a spice grinder or with a mortar & pestle, finely grind together the toasted spices & chilies.
5Mix in remaining ingredients.
6Store in refrigerator in a well sealed jar.
