Ingredients:
8 cupWater
2 cupDried hibiscus blossoms
Find in Jamaican or Mexican
Markets sometimes called
Sorrel blossoms
1 tspFresh ginger -- grated
1 cupSugar -- or to taste
Jamaican rum (optional)
Procedures:
1In a 4 quart stainless steel or glass pot, bring the water to a boil.
2Add the hibiscus and ginger.
3Turn off the heat, then cover and steep for 4 hours.
4Strain and sweeten with sugar to taste.
5Chill and serve, or serve with good rum, the amount according to your taste.
6Makes 2 quarts.
