Ingredients:
| | PASTRY | | 1 1/2
| cup | All-purpose flour, sifted | | 1/4
| tsp | Baking powder | | 1/4
| tsp | Salt | | 1/3
| cup | Shortening | | 5
| tbsp | Ice water | | | LEMON BUTTER | | 1 1/2
| tbsp | Butter or margarine | | 1
| cup | Sugar | | 1/3
| cup | Lemon juice | | | Grated rind of 1 lemon | | 3
| | Eggs, well beaten |

Procedures:
| 1 | Cut in shortening; gradually add ice water. | | 2 | Blend until dough just holds together; then form into a ball. | | 3 | Divide in two parts and roll out 1/8 inch thick. | | 4 | Cut with 2 ?inch cookie cutter and place on ungreased baking sheet. | | 5 | Bake at 450°F. | | 6 | (hot oven) for 12 to 15 minutes. | | 7 | Cool and spread about 1 tsp lemon butter on each. | | 8 | lemon butter: cut butter or margarine into sugar with a pastry blender or fork. | | 9 | Add lemon juice, rind and eggs. | | 10 | Cook over boiling water until thick, stirring constantly. | | 11 | Cool and place in refrigerator until thoroughly chilled before spreading on pastry rounds. | | 12 | makes 32 tarts. |
