Lemon butter tarts

Ingredients:
PASTRY
1 1/2 cupAll-purpose flour, sifted
1/4 tspBaking powder
1/4 tspSalt
1/3 cupShortening
5 tbspIce water
LEMON BUTTER
1 1/2 tbspButter or margarine
1 cupSugar
1/3 cupLemon juice
Grated rind of 1 lemon
3 Eggs, well beaten
Procedures:
1Cut in shortening; gradually add ice water.
2Blend until dough just holds together; then form into a ball.
3Divide in two parts and roll out 1/8 inch thick.
4Cut with 2 ?inch cookie cutter and place on ungreased baking sheet.
5Bake at 450°F.
6(hot oven) for 12 to 15 minutes.
7Cool and spread about 1 tsp lemon butter on each.
8lemon butter: cut butter or margarine into sugar with a pastry blender or fork.
9Add lemon juice, rind and eggs.
10Cook over boiling water until thick, stirring constantly.
11Cool and place in refrigerator until thoroughly chilled before spreading on pastry rounds.
12makes 32 tarts.
