Ingredients:
2 cupNonfat yogurt
(gelatin-free)
Procedures:
1Line a strainer with a cloth napkin or coffee filter and set it over a bowl.
2Place the yogurt into the strainer.
3Cover the yogurt with plastic wrap and set it in the refrigerator to drain.
4It is yogurt "cheese" when it is reduced to 1 cup, which may take from 4 hours to overnight.
5Notes : this alternative to cream cheese can be used in dips, for desserts, or wherever a recipe calls for cream cheese.
6The freshest yogurt makes the sweetest cheese.

8The cheese will keep for up to 4 days covered and refrigerated.
