Ingredients:
| | 12 ea Dried red chili peppers | | | -- soaked, seeded & chopped | | 1
| tsp | Kaffir peel, chopped | | 4
| tsp | Cilantro root, chopped | | 1
| tsp | Salt | | 1
| tsp | Black peppercorns, ground | | 2
| tsp | Galanga powder | | 1
| tsp | Lemongrass, chopped | | 1
| tsp | Garlic, chopped | | 1/2
| cup | Shallots, chopped |

Procedures:
| 1 | Soak all dried ingredients until soft (see note). | | 2 | place all ingredients in a blender or food processor & blend until a smooth paste is formed. | | 3 | If using dried ingredients, add some water, but not too much. | | 4 | note: use 2 ts dried kaffir, or 2 ts dried lemon grass to replace the fresh called for above. | | 5 | puangkram c. schmitz & michael j. | | 6 | Worman, "practical thai cooking" |
