Sauteed garlic salad dressing

Ingredients:
1 tbspWine vinegar
1 tbspLemon juice
1 tspDijon mustard
1/4 cupOlive oil
1 tspGarlic (heaping) or
2 largeGarlic cloves, fine chopped
Salt & freshly ground pepper
Torn lettuce to serve 4
1 largeTomato, seeded & chopped, or
2 smallTomatoes
1/4 cupFresh chives, chopped
Salt and pepper
1/2 cupWalnuts, toasted
2 tbspGrated Asiago cheese or
Fresh Parmesan cheese*
Procedures:
1*use up to 3 tb. of cheese, according to taste.
2in a bowl or blender, combine vinegar, lemon juice and mustard.
3in a small skillet, heat olive oil.
4Add garlic; saute until just golden.
5Gradually whisk in the vinegar mixture, blending thoroughly.
6Add salt and pepper to taste.
7pour dressing over salad bowl containing the lettuce and tomato; sprinkle walnuts and cheese over the salad before serving.
