Apple and oat bran muffins

Ingredients:
1 1/4 cupWhole Wheat Flour
1/3 cupPacked Brown Sugar
1/4 tbspBaking Soda
1/4 tbspGround Nutmeg
1 cupButtermilk
2 tbspCooking Oil
1 cupOat Bran
2 1/2 tbspBaking Powder
1/4 tbspSalt
1/4 tbspCinnamon
2 xEgg Whites
3/4 cupShredded, peeled Apple
Procedures:
1In a med bowl stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg, and cinnamon.
2Set aside.
3In a small bowl combine buttermilk, egg whites, and oil, add to dry ingredients; stir just till moistened.
4Stir in shredded apple.
5Store batter, tightly covered, in the refrigerator for up to 5 days.
6To bake, spray muffin cups with non-stick spray coating.
7Spoon about ?cup batter into each muffin cup.
8Bake in a 375 deg f oven for 18-20 minutes or till a toothpick inserted near the center comes out clean.
9Makes 12 muffins.
