Ingredients:
| 3
| each | Bananas, Ripe, Md | | 1
| each | Egg, Large, Unbeaten | | 2/3
| cup | Sugar | | 2
| tbsp | Light Molasses Or Syrup | | 2
| tbsp | Shortening, Melted | | 2
| cup | Whole Wheat Flour | | 1
| tsp | Baking Powder | | 1
| tsp | Baking Soda | | 1/2
| tsp | Salt | | 1
| cup | Walnuts, Chopped, Optional |

Procedures:
| 1 | Mash the bananas until no lumps remain. | | 2 | Add the unbeaten egg, mixing well. | | 3 | Beat in the sugar, molasses and the shortening. | | 4 | (note: the secret of this recipe is to mix the above ingredients well until very smooth). | | 5 | Sift the flour, baking power, soda, and salt together and add to the liquid mixture. | | 6 | As these are a quick bread, do not beat the dry mixture into the liquid but rather fold it in only until it is moistened and no streaks remain. | | 7 | Spoon the mixture into a muffin tin that has been sprayed with a non-stick coating. | | 8 | Bake at 350 °F for 20 to 25 minutes or until done. | | 9 | Serve warm. |
