Ingredients:
1 cupFlour -- PLUS
2 tspFlour
1/2 cupNonfat dry milk powder
1/4 cupBrown sugar -- firmly packed
2 tspBaking powder
1/4 tspNutmeg
1/2 tspBaking soda
1 cupButtermilk -- PLUS
2 tspButtermilk
1 Egg -- lightly beaten
1/4 cupVegetable oil -- LESS
2 tspVegetable oil
2 tbspWhipped butter -- melted
1 Bananas -- ripe, mashed
1/2 cupGolden raisins -- plumped
1 ozWalnuts -- chopped
Procedures:
1Preheat oven to 400.
2Spray 12 muffin cups with nonstick spray.
3In medium mixing bowl combine flour, milk powder, sugar, baking powder, baking soda and nutmeg; stir to combine and set aside.
4In small bowl, combine buttermilk, egg, oil, and butter and stir until blended; stir in dry ingredients.
5Add banana, raisins, and walnuts and stir to combine (mixture will be lumpy).
6Fill each baking cup with an equal amount of batter and bake for 15 minutes (until golden brown and a toothpick inserted in center comes out dry).
7Transfer muffins from pan to wire rack and cool.
