| cup | Vegetable oil | | 2
| | Eggs | | 2
| cup | Finely shredded raw carrots | | 1/4
| cup | Chopped pecans |

Procedures:
| 1 | Confectioners sugar preheat: oven to 37Line 12 muffin cups with paper liners; set aside. | | 2 | Combine flour, sugar and cinnamon in mixing bowl. | | 3 | Mix applesauce, oil and eggs together. | | 4 | Add to dry ingredients and stir just until combined. | | 5 | Mix in carrots and nuts. | | 6 | Fill prepared muffin cups about ?to ?full. | | 7 | Bake 18 to 20 minutes or until toothpick inserted in center comes out clean. | | 8 | Remove from pan and cool on wire rack. | | 9 | Makes 12 muffins. | | 10 | Decorate tops of muffins by sifting confectioners sugar over desired stencil patterns such as numbers and letters |
