Ingredients:
1 cupWhite Lily self-rising Soft
-Wheat Flour
1/2 cupSugar
1 tspCinnamon
1/4 cupApplesauce
1/4 cupVegetable oil
2 Eggs
2 cupFinely shredded raw carrots
1/4 cupChopped pecans
Procedures:
1Confectioners sugar preheat: oven to 37Line 12 muffin cups with paper liners; set aside.
2Combine flour, sugar and cinnamon in mixing bowl.
3Mix applesauce, oil and eggs together.
4Add to dry ingredients and stir just until combined.
5Mix in carrots and nuts.
6Fill prepared muffin cups about ?to ?full.
7Bake 18 to 20 minutes or until toothpick inserted in center comes out clean.
8Remove from pan and cool on wire rack.
9Makes 12 muffins.
10Decorate tops of muffins by sifting confectioners sugar over desired stencil patterns such as numbers and letters
