Cheddar popovers/lowfat

Ingredients:
3 Egg whites
1/2 cupSkim milk
1 tbspMargarine
=(Reduced Calorie/Melted)
1/3 cupBread flour
2 tbspFlour, whole-grain wheat
1/8 tspSalt
Vegetable cooking spray
2 tbspSharp cheddar cheese
=(Reduced Fat/Shredded)
Procedures:
1Beat egg whites at high speed until foamy.
2Add milk and margarine; beat at medium speed until well blended.
3Gradually add bread flour, whole wheat flour and salt, beating until mixture is smooth.
4Coat muffin pans with cooking spray.
5Heat at 450 °F for 2-3 minutes or until hot.
6Remove pans from oven.
7Pour 1 tablespoon batter into each cup; sprinkle each with 1 teaspoon cheese.
8Fill cups three-fourths full with remaining batter.
9Bake at 375 °F for 45 minutes.
10Cut a small slit in top of each turnover and bake an additional 5 minutes.
11Serve immediately.
12Yield: 6 popovers (70 calories each/27 percent from fat) fat: 2.1 g (0.5 is saturated fat).
