Ingredients:
| 8
| oz | Chickpeas, soaked & cooked | | 2
| each | Garlic bulbs, boiled whole | | | -- for 20 minutes, drained | | 4
| oz | Olive oil | | 2
| each | Juice of lemons | | 3
| oz | Tahini | | | Black pepper | | 4
| tbsp | Fresh chopped parsley | | | Tomatoes to garnish |

Procedures:
| 1 | Blend the chickpeas till well pureed. | | 2 | Squeeze the garlic cloves from their skins & add to the chickpeas. | | 3 | Put in the oil, lemon juice & tahini. | | 4 | Blend again. | | 5 | Add pepper & parsley & mix well. | | 6 | Put the mixture into an oiled mould & chill for 2 hours. | | 7 | Turn it onto a plate & garnish with tomato wedges or slices. | | 8 | Gail duff, "a book of herbs & spices |
