Date/nut muffins

Ingredients:
1 1/4 cupWhole wheat flour
1/2 tspSalt
1/2 tspBaking soda
2 tspBaking powder
1/2 cupWheat germ or bran
1/2 cupChopped dates
1/2 cupChopped nuts (walnuts)
2 tbspOil
3 tbspMolasses
1 cupApple juice
1 tspLemon zest
1/4 tspAllspice
Procedures:
1Mix flour and leavenings in a large bowl.
2Stir in bran or germ, dates, and nuts.
3Mix remaining ingredients in another bowl until smooth; add to flour mixture.
4Stir just to combine.
5Drop into muffin cups (makes 12 small ones, less more satisfying larger ones).
6Sprinkle rolled oats on top to look pretty.
7Bake at 375 °F for 15-20 minutes.
8non-vegan slightly higher-fat alternative: substitute buttermilk and and egg for the apple juice.
