| 1 | In a large mixing bowl combine apples and sugar. |
| 2 | Gently fold in cranberries, carrots and nuts. |
| 3 | In another bowl combine flour, baking powder, baking soda, salt and cinnamon. |
| 4 | Mix well. |
| 5 | Add to apple mixture. |
| 6 | Mix well to moisten dry ingredients. |
| 7 | Combine eggs and oil; stir into apple mixture. |
| 8 | Fill 18 greased muffin tins 2/3 full. |
| 9 | Bake at 375 °F for 20-25 minutes. |
| 10 | Cool 5 minutes before removing from tins. |
