Ingredients:
1 tspBaking soda
1 tbspHot water
1 cupRoom temperature butter
1 cupSugar
1 cupMolasses
4 Separated, room temp egg
3 1/2 cupAll purpose flour
1 tspFreshly grated nutmeg
1 tspCinnamon
1 tspGround ginger
1 cupButtermilk
1 cupChopped pecan
1 cupRaisin
Pn Cream of tartar
Procedures:
1(makes about 40).
2Preheat oven to 350 deg.
3Grease 2-inch muffin tins.
4Dissolve baking soda in hot water.
5Cream butter with sugar until light and fluffy, using electric mixer.
6Blend in molasses, yolks and soda.
7Combine flour, nutmeg, cinnamon and ginger.
8Mix into butter alternately with buttermilk in 3 additions each.
9Fold in nuts and raisins.
10Beat whites with cream of tartar in another bowl until stiff but not dry.
11Fold into batter.
12Spoon into prepared tins, filling ?full.
13Bake until tester inserted in center comes out clean, 20 to 25 minutes.
14Transfer to racks.
15(can be prepared 1 day ahead.
16Reheat in 350 deg.
17Oven about 4 minutes).
