Ingredients:
1 1/2 cupFlour
1 3/4 tspBaking powder
1/2 tspSalt
1/4 tspAllspice
1/4 tspNutmeg
1/2 cupSugar
1/3 cupMargarine
1 Egg, slightly beaten
1/4 cupMilk
10 ozMandarin orange tin, drained
TOPPING (optional)
1/4 cupMelted butter
1/4 cupSugar
1/2 tspCinnamon
Procedures:
1Note: tin of broken segments is less expensive than whole segments.
2About a cup of fresh orange pieces could be used.
3sift flour with other dry ingredients.
4Cut in margarine.
5Combine egg and milk, and add all at once to dry ingredients -- mix only until moistened.
6fold in orange pieces and break them up more if batter seems to dry at first.
7Fill greased muffin tins ?full.
8bake at 350f for 20 to 25 minutes.
9remove from muffin tins while still warm.
10Dip tops in melted butter and sugar-cinnamon mixture.
11Makes 12 large muffins.
