Ingredients:
TOPPING
1/4 cupQUAKER Oats uncooked
-(quick or old fashioned)
2 tbspGranulated sugar
MUFFINS
1 1/2 cupQUAKER Oats uncooked
-(quick or old fashioned)
1 cupAll-purpose flour
1/2 cupGranulated sugar
1 tbspBaking powder
1/4 tspSalt (optl)
1 cupSkim milk
2 Egg whites or
-1 egg, slightly beaten
2 tbspVegetable oil
1 tspGrated lemon peel
1 tspVanilla
1 cupBlueberries
-fresh or frozen
Procedures:
1Heat oven to 400°F.
2Line 12 muffin cups with paper baking cups or spray bottoms only with no-stick cooking spray.
3For topping, combine ?cup oats and sugar; mix well.
4Set aside.
5For muffins, combine 1-?cups oats, and remaining dry ingredients; mix well.
6Add combined milk, egg whites, oil, lemon peel and vanilla, mixing just until dry ingredients are moistened.
7Gently stir in blueberries.
8Fill muffin cups almost full.
9Sprinkle with reserved topping, patting gently.
10Bake 20 to 24 minutes or until light golden brown.
11Let muffins stand a few minutes; remove from pan.

13note for jumbo muffins: heat oven to 400°F.
14Line 6 jumbo muffin cup with paper baking cups or spray bottoms only with no-stick cooking spray.
15For topping, combine 2 tablespoons old fashioned oats and 1 tablespoon granulated sugar; set aside.
16Proceed as recipe directs except bake muffins 28 to 32 minutes or light golden brown.
17Let muffins stand a few minutes; remove from pan.
