Quaker's: banana orange oatmeal muffins

Ingredients:
1 1/2 cupQUAKER Oats uncooked
-(quick or old fashioned)
1 cupAll-purpose flour
1/3 cupFirmly packed brown sugar
1 tspBaking powder
1/2 tspBaking soda
1/2 tspGround cinnamon
1/4 tspSalt [optl)
1/3 cupChopped dates
8 ozNonfat plain yogurt
3/4 cupMashed banana (2 medium)
2 Egg whites or
-1 egg, slightly beaten
2 tbspVegetable oil
Procedures:
1L l/2 ts grated orange peel
2heat oven to 400°F.
3Spray bottoms only of 12 muffin cups with no-stick cooking spray.
4Combine dry ingredients including dates; mix well.
5Add combined yogurt, banana, egg whites, oil and orange peel, mixing just until dry ingredients are moistened.
6Fill muffin cups almost full.
7Bake 20 to 22 minutes or until golden brown.
8Let muffins stand a few minutes; remove from pan.
9* or substitute ?cup skim milk combined with 2-?teaspoons lemon juice for yogurt.
10Let milk and juice stand 5 minutes or until slightly thickened.
11Proceed as recipe directs.
