Raisin oat muffins

Ingredients:
2 1/2 cupRolled oats
1 pintBaking powder
1/2 cupRaisins
2 pintRaisins
1 cupSkim milk
1 pintLemon juice
1/3 cupFirmly packed brown sugar
1 pintVegetable oil
2 pintVegetable oil
2 Egg whites
2 pintVanilla extract
Procedures:
1Preheat oven to 375 degrees.
2Lightly oil 10 muffin cups or spray with a nonstick cooking spray.
3Place oats in a blender container and blend until it has the consistency of flour.
4Place in a large bowl and add baking powder.
5Mix well.
6Stir in raisins.
7Place milk in a medium bowl.
8Add lemon juice and let stand 1 minute.
9Add remaining ingredients.
10Beat with a fork or wire whisk until blended.
11Add to dry mixture, mixing until all ingredients are moistened.
12Divide batter evenly into prepared muffin cups.
13Bake 20 minutes, until a toothpick inserted into the center of a muffin comes out clean.
14Remove muffins to arack to cool.
