Rhubarb pecan muffins

Ingredients:
2 cupFlour
3/4 cupSugar
1 1/2 tspBaking powder
1/2 tspBaking soda
1/2 tspSalt
3/4 cupChopped pecans
1 largeEggs
1/4 cupOil
2 tspGrated orange peel
3/4 cupOrange juice
1 1/4 cupRhubarb, chopped fine
Procedures:
1Mix all dry ingredients together and set aside.
2In a medium bowl, beat the egg, and add the oil, grated orange peel, and orange juice.
3Put the wet ingredients into the dry ingredients, and mix just until batter is moist.
4Stir in the rhubarb.
5Pour into greased muffin pans or paper cups.
6Bake at 350f for 25 to 30 minutes.
7Check after 20 minutes as doneness will depend on how large your muffins are.
8*** they take quite a while to cook.
9I made monster ones that took almost 45 minutes.
10I also use chopped almonds rather than pecans and it is equally good
