Ingredients:
1 tbspButter
2 lbsCarrots, peeled and cut into
Chunks
1 pinchGinger, (2 inch) peeled and
Sliced
3 cupVegetable broth
Salt
Pepper
1 Orange
Procedures:
1Recipe by: from my garden show # f5538 in larger saucepan melt butter and add carrots.
2Gently saute carrots and ginger.
3Add vegetable broth and cook until carrots are softened, about 25 minutes.
4Pour mixture into a food processor and puree.
5Season with salt and pepper and add the juice and zest of the orange.
6Serve hot or cold.
