Ingredients:
Red pepper
Green pepper
Yellow pepper
English cucumbers
Roma tomatoes
C. buttermilk
C. sour cream
Uice of 4 limes
Alt and pepper to taste
Routons
Procedures:
1Fine dice peppers, cucumbers and tomatoes.
2Reserve a little tomato and cucumber for garnish.
3Mix buttermilk, sour cream, and lime juice.
4Add vegetables to buttermilk mixture.
5Season with salt and pepper.
6Serve with a garnish of chopped cucumber, tomato and 8 pita croutons around edge of soup bowl.
7*pita croutons: cut 6 pieces of pita bread into 8 wedges.
8Separate, brush with olive oil.
9Toast in oven till crisp.
