Chestnut broth with soft spices

Ingredients:
1/2 Carrot
1/2 Leek
1 Celery Sticks
Vegetable Oil
1/4 tspNutmeg
1/4 tspCinnamon
1/4 tspCoriander
1/4 tspMace
3/4 pintWater
1/2 tbspPassata
4 ozChopped Chestnuts
1/4 pintMilk
Lemon Juice
Seasoning
Procedures:
1Fry the chopped carrot, leek and celery in the vegetable oil until they start to colour, then stir in all the spices.
2Allow the spices to cook for a few seconds then add the water and passata.
3Stir well.
4Add the chestnuts, bring to the boil and cook until soft, for around 20 minutes.
5Add the milk and lemon juice and season to taste.
6Puree.
7Return to the pan, heat and then serve.
