Ingredients:
8 ozBaked potatoes
1 medChopped onion
1 tbspChopped green onion
2 tspButter
3 cupChicken stock
Salt and pepper to taste
1 cupHalf and half
Sour cream
Shredded cheedar cheese
Minced green onions
Parsley
Procedures:
1Peel potatoes.
2Reserve pulp.
3In a 2-quart sauce pan., saute onions in butter over medium-low heat until soft.
4Add chicken stock, salt, pepper and potato pulp.
5Stir to blend.
6Stir in half and half.
7Heat to serving temperature.
8Garnish bowl with sour cream, and green onions or parsley.
