| med | Chopped onion | | 1
| tbsp | Chopped green onion | | 2
| tsp | Butter | | 3
| cup | Chicken stock | | | Salt and pepper to taste | | 1
| cup | Half and half | | | Sour cream | | | Shredded cheedar cheese | | | Minced green onions | | | Parsley |

Procedures:
| 1 | Peel potatoes. | | 2 | Reserve pulp. | | 3 | In a 2-quart sauce pan., saute onions in butter over medium-low heat until soft. | | 4 | Add chicken stock, salt, pepper and potato pulp. | | 5 | Stir to blend. | | 6 | Stir in half and half. | | 7 | Heat to serving temperature. | | 8 | Garnish bowl with sour cream, and green onions or parsley. |
