Baked potato soup

Ingredients:
6 To 8 slices bacon
1 cupDiced yellow onions
2/3 cupFlour
6 cupHot chicken stock
4 cupDiced -- peeled baked
Potatoes
2 cupHeavy cream
1/4 cupChopped parsley
1 1/2 tspGranulated garlic
1 1/2 tspDried basil
1 1/2 tspSalt
1 1/2 tspRed pepper sauce
1 1/2 tspCoarse black pepper
1 cupGrated Cheddar cheese
1/4 cupDiced green onions -- white
Part only
Additional chopped bacon --
Grated cheese and
Chopped parsley for
Garnish
Procedures:
1Fry bacon until crisp.
2Chop bacon and reserve drippings.
3Cook onions in remaining drippings over medium-high heat until transparent, about 3 minutes.
4Add flour, stirring to prevent lumps.
5Cook 3 - 5 minutes until mix just begins to run golden.
6Add chicken stock gradually, whisking to prevent lumps, until liquid thickens.
7Reduce heat to simmer and add potatoes, cream, chopped bacon, parsley, garlic, basil, salt, pepper sauce and black pepper.
8Simmer 10 minutes; do not allow to boil.
9Add grated cheese and green onions.
10heat until cheese melts smoothly.
11Garnish each serving as desired with chopped bacon, grated cheese and chopped parsley.
