Basic cream of vegetable soup

Ingredients:
3 tbspUnsalted butter
1 cupChopped onion
1 Potato, peeled and diced
2 cupWater or chicken stock
1 1/2 cupSteamed vegetables
-- i.e. carrots, broccoli
-spinach, or
Peas
Salt and pepper
1/2 cupHeavy cream
Procedures:
1Recipe by: tvfn how to boil water in a large saucepan, melt butter over medium heat.
2Add the chopped onion and cook until tender without browning.
3Stir in diced potato and liquid.
4Bring to a boil and simmer until potato is tender.
5Stir in your steamed vegetable of choice and return to a simmer.
6Puree the soup in batches in a blender and return to saucepan.
7Leave 1 cup of vegetables not pureed if a chunkier soup is preferred.
8Season soup with salt and pepper and finish with heavy cream.
9Serve warm with french bread and a salad.
