| tsp | Thyme (dried leaf) | | 1/2
| tsp | Paprika | | 8
| cup | Water | | 8
| cup | Cabbage, chpd (1 head) | | 2
| lbs | Tomatoes, (2 cans) | | 2
| tsp | Salt | | 3/4
| cup | Tabasco sauce | | 1/4
| cup | Parsley, chopped | | 3
| tbsp | Lemon juice | | 3
| tbsp | Sugar | | 1
| lbs | Sauerkraut (1 can) |

Procedures:
| 1 | Place beef bones, onion, carrots, garlic and bay leaf in roasting pan. | | 2 | Top with short ribs; sprinkle with thyme and paprika. | | 3 | Roast, uncovered, in 450* oven for 20-30 minutes or until meat is brown. | | 4 | Transfer meat and vegetables into large kettle. | | 5 | Using a small amount of water, scrape browned meat bits from roasting pan into kettle. | | 6 | Add water, cabbage, tomatoes, salt and tabasco. | | 7 | Bring to boil. | | 8 | Cover; simmer 1 ?hours. | | 9 | Skim off fat. | | 10 | Add parsley, lemon juice, sugar and sauerkraut. | | 11 | Cook, uncovered, for 1 hour. | | 12 | Remove bones and short ribs from kettle. | | 13 | Cool slightly; remove meat from bones. | | 14 | Cut meat into cubes; return to kettle. | | 15 | Cook 5 minutes longer. | | 16 | (from a texas cook now unknown) |
