Ingredients:
2 lbsFish trimmings
- Do not use Salmon
2 quartCold water
1/4 cupTarragon vinegar
2 Celery stalks with leaves
- cut into 2-inch pieces
2 Carrots, cut into 2" pieces
2 Leeks, white part only
- split
1/2 medHead of lettuce
10 White peppercorns
5 Dill sprigs, fresh
3 Parsley sprigs
2 Bay leaves
1 tspDried thyme
1 tspSalt
Procedures:
1Combine all ingredients in 4- to 5-quart saucepan and bring to boil.
2Reduce heat and simmer uncovered 45 minutes.
3Strain through colander or cheesecloth-lined strainer before using.
