Ingredients:
8 medOnions, Sliced
3 tbspButter
2 Bay Leaves
48 ozBeef Consomme
48 ozWater
3 tbspHP (Steak) Sauce
2 tbspWorcestershire Sauce
1/2 cupDry Sherry
Salt
Pepper
10 Slices (Round) Bread
-Toasted
2 1/2 lbsMild White Cheddar, Sliced
-Thin
Procedures:
1Saute the onions, butter and bay leaves in a large skillet until the onions are transparent.
2Combine the onion mixture with the consomme, water, steak (hp) sauce, worcestershire sauce, sherry, salt and pepper in a large saucepan.
3Bring to a boil.
4Reduce heat to a simmer.
5Simmer for 5 minutes.
6Fill each serving bowl only ?full.
7Float a toasted bread slice on each.
8Cover the bread with cheese slices (about ?lb of cheese per bowl).
9Place the bowls under the broiler until the cheese melts and turns golden brown.
10Serve hot.
