French onion soup (au pied de cochon restaurant)

Ingredients:
2 tbspUnsalted butter
1/4 cupVegetable oil
3 1/2 lbsOnions, thinly sliced
2 cupDry wine
6 cupChicken stock or canned
Low-salt broth
12 ?inch thick french bread
Baguette slices, toasted
1 cupGruye're cheese (about 4 oz)
Procedures:
1Melt butter with oil in heavy large pot over medium heat.
2Add onions, cover and cook until lightly colored, stirring occasionally, about 45 minutes.
3Add wine and bring to boil, scraping up any browned bits.
4Cook 5 minutes.
5Add browned bits.
6Cook 5 minutes.
7Add stock and bring to simmer.
8Simmer uncovered 1-?hours.
9Season to taste with salt and pepper.
10Can be prepared 1 day ahead.
11Cover and refrigerate.
12Bring to simmer before continuing.
13Preheat broiler.
14Ladle soup into boilerproof bowls.
15Top with slices of toasted french bread.
16Sprinkle with grated gruyere cheese.
17Broil until cheese melts.
