French onion soup with cheese gratinee

Ingredients:
FRENCH ONION SOUP
45 gramsButter
1 tbspLight olive oil
750 gramsOnions, thinly sliced
1 tspSalt
2 tspPlain flour
7 cupBeef stock
1/2 cupDry white wine
Freshly ground pepper
ONION SOUP GRATINEE
Rounds of french bread
- baked or toasted
125 gramsGruyere or Emmentaler
- cheese, finely sliced
Procedures:
1French onion soup: =================
2melt the butter and oil in a large heavy saucepan.
3Add the onions and allow them to cook very slowly until softened and golden, stirring occasionally.
4Do not allow them to brown.
5Sprinkle with salt and stir in the flour.
6When blended allow to cook over a moderate heat for 3 mins.
7Remove from the heat and stir in stock.
8Add the wine.
9Season with pepper.
10Cover the pot and allow to simmer for 30-40 mins, skimming the surface of the soup occasionally.
11while the soup is cooking, bake the bread slices on a baking sheet in a moderately slow oven 160 c for about 30 mins until crisp and lightly colored.
12Serve the bread with the soup.

14place prepared bread into a soup tureen or bowls.
15Pour boiling soup over the bread.
16scatter the cheese over the top and place under a hot griller until the cheese melts and browns lightly.
