George harris' hot & sour celery soup

Ingredients:
FROM: GEORGE HARRIS
CYBEREALM BBS 315-786-1120
1 galChicken broth, lo salt
-divided
4 lbsChopped celery
3/4 cupRice wine vinegar
3/4 cupLow sodium soy sauce
1/2 cupCornstarch
1/3 cupFresh minced ginger
1 tspRed pepper flakes
2 lbsSunchokes
2 lbsJimaca
2 lbsTofu, drained and diced
3 cupSliced scallions
1 cupWater
1 cupEgg substitute (optional)
2 tbspSesame oil (optional)
Procedures:
1In a large soup pot, heat 2 cups of broth.
2Add celery, cover and steam for 3-4 minutes.
3Uncover, and add remaining chicken broth, vinegar, soy sauce, ginger, and red pepper.
4Bring to boil.
5Reduce heat and simmer 12-14 min. Add tofu, sunchokes, jimaca and scallions and bring to a boil.
6Combine cornstarch and water and mix to create a paste.
7Whisk mixture into boiling soup and cook until thickened, and remove from heat.
8Whisk in egg substitute and sesame oil if desired.
