Ginger carrot soup

Ingredients:
7 1/4 cupChicken stock
1 cupLeeks, white part only
Sliced
1 1" piece ginger, grated
3 Cloves garlic, minced
1 cupWhite wine
1 1/2 lbsCarrots, peeled and cut into
1 inch pieces
2 tbspFresh lemon juice
1/2 tbspCurry powder
Salt and pepper to taste
Procedures:
1In a large pot, heat ?cup chicken stock.
2Add leeks, ginger and garlic; cook until tender.
3Add remaining stock, wine and carrots.
4Bring to a boil, reduce heat and simmer uncovered until carrots are tender, about 40 minutes.
5Puree batches in blender.
6Season with lemon juice, curry, salt and pepper.
7Serve hot or cold.
