Ingredients:
| 7 1/4
| cup | Chicken stock | | 1
| cup | Leeks, white part only | | | Sliced | | 1
| | 1" piece ginger, grated | | 3
| | Cloves garlic, minced | | 1
| cup | White wine | | 1 1/2
| lbs | Carrots, peeled and cut into | | | 1 inch pieces | | 2
| tbsp | Fresh lemon juice | | 1/2
| tbsp | Curry powder | | | Salt and pepper to taste |

Procedures:
| 1 | In a large pot, heat ?cup chicken stock. | | 2 | Add leeks, ginger and garlic; cook until tender. | | 3 | Add remaining stock, wine and carrots. | | 4 | Bring to a boil, reduce heat and simmer uncovered until carrots are tender, about 40 minutes. | | 5 | Puree batches in blender. | | 6 | Season with lemon juice, curry, salt and pepper. | | 7 | Serve hot or cold. |
