Goldilocks' gourmet spinach soup

Ingredients:
5 tbspButter, sweet
1/4 lbsMushrooms, fresh, washed
-dried, trimmed & diced
1 Scallion, chopped
5 tbspFlour, all-purpose
2 cupChicken broth
2 cupMilk
1/2 tspSalt, (opt)
Pepper, black
Nutmeg, ground, (opt)
1/4 lbsCream cheese, softened & cut
-into cubes
1 cupSwiss, grated
3/4 lbsSpinach, fresh
Procedures:
1Wash spinach; trim, cook, and chop.
2Melt the butter in a large saucepan.
3In it slowly saut?the mushrooms and scallion until tender.
4Add flour and stir just until flour is cooked, a couple of minutes.
5Whisk in first chicken broth and then milk, stirring until thickened.
6Add salt if desired, pepper, nutmeg if desired, cream cheese and swiss cheese; stir until melted.
7Then stir in spinach.
8Heat and stir very gently.
9Season to taste.
10Serve hot.
