Ingredients:

| lbs | Mushrooms, fresh, washed | | | -dried, trimmed & diced | | 1
| | Scallion, chopped | | 5
| tbsp | Flour, all-purpose | | 2
| cup | Chicken broth | | 2
| cup | Milk | | 1/2
| tsp | Salt, (opt) | | | Pepper, black | | | Nutmeg, ground, (opt) | | 1/4
| lbs | Cream cheese, softened & cut | | | -into cubes | | 1
| cup | Swiss, grated | | 3/4
| lbs | Spinach, fresh |

Procedures:
| 1 | Wash spinach; trim, cook, and chop. | | 2 | Melt the butter in a large saucepan. | | 3 | In it slowly saut?the mushrooms and scallion until tender. | | 4 | Add flour and stir just until flour is cooked, a couple of minutes. | | 5 | Whisk in first chicken broth and then milk, stirring until thickened. | | 6 | Add salt if desired, pepper, nutmeg if desired, cream cheese and swiss cheese; stir until melted. | | 7 | Then stir in spinach. | | 8 | Heat and stir very gently. | | 9 | Season to taste. | | 10 | Serve hot. | | 11 | ---*dying for chocolate* diane mott davidson |
