Ingredients:
1/2 lbsShin of beef
5 ozOnion
2 ozLard
1 ozGorund paprika
2 ozTomato puree
1 ozBouquet garni
1/2 lbsPotatoes
3/4 cupWater
Salt and pepper
Tarhonya pasta
4 ozFlour
1 Egg
Procedures:
1Cut meat in small ?inch cubes and chop the onions firmly.
2Saute the meat and onion with lard in a saucepan until golden brown.
3Add the paprika.
4Stir well for a few minutes.
5Add water and bouquet garni and simmer 1 ?hours until the meat is tender.
6Add potatoes cut in ?inch cubes and cook until tender but not mushy.
7Remove garni: season with salt and pepper.
8Add cooked pasta to soup and servve.
9pasta: blend egg and flour to a dough.
10Rest for a few minutes then roll thinly.
11Either cut pasta in thin shreds or in small strips or squares.
12Drain and add to soup 10 minutes before serving to allow pasta to soften up.
